Our award-winning Sullivan University-trained food expert, an officer with the local chapter of the American Culinary Federation, talked about St. Vincent de Paul’s hunger-relief outreach at our so-called “soup kitchen,” which serves up delicious, restaurant-quality meals twice daily — free to anyone in the community who is need — and SVDP’s Food Pantry for the poor and homeless.
The dish he prepared on TV is one that is especially popular with our OHK guests, and it is on the menu each Lenten season, when our OHK serves meatless meals (fish) each Friday. This is Chef Charlie’s version of New Orleans-style, barbecued shrimp, which he serves with grits and slices of French bread.
