Editor’s Note: On one of his first days volunteering to help out at the SVDP Food Pantry, Brother Bartholomew, a seminarian visiting SVDP for the summer from the Dominican House of Studies, showed up with a homemade treat for our clients doing their grocery shopping.
“I was just trying to bake something with ingredients that people coming to the food pantry would have access to, and encourage them to take some of the less popular items,” he explained. “Like dates.”
The sweet, sliced Date Orange Bread, served with our customary hot coffee, was a huge hit with shoppers in our pantry that day. Here’s the recipe, courtesy of Brother Bartholomew.
DATE ORANGE BREAD
Ingredients

1 egg

2 tablespoons butter, softened

1 cup white sugar

2/3 cup orange juice

1/3 cup boiling water

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

3/4 teaspoon salt

1 cup dates, pitted and chopped (A 1lb bag is about 3 cups)
Directions

Preheat oven to 350 degrees F. Grease one 9x5x3-inch loaf pan.

Beat egg slightly. Add butter and sugar. Beat smooth. Place juice in a 1 cup measure and add boiling water to fill the cup. Stir juice and vanilla into batter.

In another bowl, put flour, baking powder, soda, and salt. Stir in dates. Pour over batter. Stir to moisten. Spoon into greased 9x5x3-inch loaf pan.

Bake for 1 hour until it tests done. Cool 10 minutes. Remove from pan. Finish cooling and wrap.
